
This is my first try making Banana Pudding using microwave… and it was amazingly successful. It took me only 10 minutes to cook this dessert and it was really delicious

We had it warm with ready made vanilla cream… yummy! you can have it with ice cream too if you like

Here’s the recipe
Microwave Banana Pudding Recipe
Adapted from BBC GoodFood Magazine, April 2010 pg.38
- 100 gram butter, softened
- 2 ripe bananas
- 100 gram Muscovado sugar (I used normal sugar)
- 100 gram self-raising flour (I used normal flour)
- 2 tsp ground cinnamon (I reduced to 1 tsp)
- 2 eggs (I replaced with Egg Replacer Powder)
- 2 tbsp milk
- icing sugar, toffee sauce, and ice cream to serve, if you like ( I used ready made vanilla cream)
- Put the butter in a 1-litre baking dish and microwave for about 30 secs-1 min until melted.
- Add 1 1/2 mashed bananas, sugar, flour, cinnamon, eggs and milk. Mix together well.
- Slice the remaining banana over the top, then return to the microwave and cook on High for 8 mins until cooked through and risen.
- Serve warm, dusted with icing sugar, if you like, with a drizzle of toffee sauce and a scoop of vanilla ice cream.

This looks very yummy! I wonder if it would work without any eggs and a little baking soda/powder? I’m allergic to some of the ingredients in egg replacer and eggs.
I’ve never tried a microwave cake before because I was afraid of disaster, but this makes me want to try it! I love banana in anything! Looks delicious!

Wow, I just made this cake/ pudding and it was divine! I really had my doubts, since I’m not a big fan of microwaves and I’m barely using mine. This cake, however, made me respect my old microwave a little more
